Here is my first update… 1 week in, 4 pounds lighter. Not too bad!

Oopsies

The first time I did a low-carb diet the breakfasts almost killed me… eggs and cheese almost everyday. It was horrible. This time I am going to spend a bit more time in the kitchen, and here’s a great recipe for a low-carb bread alternative called oopsies. If I can keep up with this, staying in ketosis is going to be easy!

How to make Oopsies

This oopsies recipe starts with 100 grams of cream cheese (make sure you read the label – some cream-cheese makers sneak carbs in to their recipe).

3 eggs

A pinch of salt

Half a teaspoon of baking powder

And just under a tablespoon of psyllium husks.

In a large bowl, separate the egg whites and drop in the salt. In a smaller bowl, add the cream cheese, psyllium husks, and baking powder to the yolks.

Stir the cream cheese and egg yolk mixture until smooth.

Whisk the egg whites until thick (this takes a bit of time, and it whips up like whipping cream). You’ll know it’s thick enough if you can turn the bowl upside-down without the egg whites moving.

Fold in the yolk-cream cheese mixture to the egg whites. Don’t mix it too much – you want it to stay fluffy.

Spoon onto a greased baking sheet (or waxed paper, as seen here). You can make 8 small oopsies, 6 medium sized, or several large ones.

Bake the oopsies for 25 minutes, until golden brown, at 150*C.

Here’s the final result, served with prosciutto and freshly grated parmesan cheese.

Overall, I’d give this a 7/10. A great bread “alternative”, but not as good as the real thing.
